Melon Duo

with Familie Wein beef ham

Ingredients (serves 4)
1 small honey melon
1 small cantaloupe melon
2 romaine lettuce hearts
Two packs of Familie Wein mildly smoked beef ham (80 g each)

For the dressing:
4 tbsp (60 ml) sunflower oil
Juice and grated zest of half a lemon
50 ml vegetable stock
2–3 tbsp (30–45 ml) apricot jam
2–3 tsp (10–15 ml) medium-strength mustard
Freshly ground pepper

Halve the honey and cantaloupe melons, discard the seeds and remove pieces of flesh with a melon baller. Alternatively, cut the melon flesh into cubes. Clean the romaine lettuce hearts, separate the leaves, rinse, cut into strips with the beef ham and mix with the remaining salad ingredients. For the dressing, mix the oil, lemon juice, lemon zest, vegetable stock, apricot jam and mustard. Season to taste with salt and pepper, then toss with the salad ingredients and serve.
