Leek and Ham Muffins

with Familie Wein smoked ham cubes

Ingredients (12 muffins)
85 g baby leeks (about three)
1 chilli pepper
1/2 bunch fresh parsley
1/2 bunch fresh chives
300 g flour
3 tsp (15 g) baking powder
140 ml cooking oil
2 eggs
225 g low-fat curd cheese
250 ml buttermilk
1 pack Familie Wein smoked ham cubes (200g)
1-2 tbsp cooking oil for the baking tray
50 g Gouda cheese

Wash and clean the baby leeks before slicing them into thin rings. Rinse the chilli pepper, slice lengthwise, remove the seeds and cut into small pieces. Wash the parsley and chives, pat dry and chop finely. Mix the flour with the baking powder, salt and pepper. Blend the oil, eggs, low-fat curd cheese and butter milk, then add the flour mixture and combine with the leeks, ham cubes, parsley, chives and chilli. Grease the muffin tray with oil, distribute the mixture evenly between the cups, sprinkle with Gouda and bake in a preheated oven at 180°C for about 35 minutes until golden brown (gas mark 4, fan 160°C).
