Strammer Max

with Familie Wein air-dried country ham or spiced ham

Ingredients (serves 4)
1 bunch spring onions
2 tbsp (30 ml) cooking oil
4 slices moist farmhouse bread
4 tsp (20 g) butter
2 packs Familie Wein air-dried country ham (80 g) or spiced ham (80 g)
4 large eggs
Coarsely ground pepper
100 g gherkins

Clean the spring onions, rinse and cut into rings, then fry briefly in hot oil, remove and set to one side. Spread the bread with butter and top with ham. Use the remaining oil to fry the eggs and place them on the ham, sprinkle with pepper and serve with a garnish of spring onions and gherkins.
