Hearty Sandwich

with Familie Wein Black Forest ham or farmer’s ham

Ingredients (serves 4)
A small punnet of cress
200 g cream cheese
1 tsp (5 ml) medium-strength mustard
Freshly ground pepper
8 portions of sliced bread
Cos lettuce leaves
1 beef tomato
For the omelettes:
2 eggs
2 tbsp (30 g) cream
1 tbsp (15 g) chopped chives
Freshly ground pepper
1 tsp (5 g) butter
1 pack Familie Wein Black Forest ham (80 g) or farmer’s ham (80 g)

Cut the cress along the stalks, mix with the cream cheese and mustard, then season to taste with salt, pepper and paprika. Spread the cream on the bread. Wash the lettuce leaves and tomato, remove the core and cut the tomato into slices. For the omelettes, whisk the eggs with the cream and chives, and season with salt and pepper. Heat the butter in a pan and fry four small omelettes. Distribute the lettuce and tomato slices over four slices of bread, place the omelettes on top, arrange the Black Forest ham on the omelettes and cover with the remaining slices of bread. Cut the sandwiches diagonally in half and serve pierced with cocktail sticks to keep them neat.
